½ cup coconut oil or unsalted butter, softened
⅓ cup maple syrup or honey
1 tsp vanilla extract
Zest of 1 lemon
1¼ cups Quay's almond flour
½ cup Quay’s Organic Arrowroot Flour
¼ tsp sea salt
½ tsp baking soda
Directions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream coconut oil and sweetener together. Add vanilla and lemon zest.
- Mix in almond flour, arrowroot flour, salt, and baking soda until a soft dough forms.
- Roll into 1-inch balls, place on the sheet, and flatten gently with your fingers or a fork.
- Bake for 10–12 minutes until edges are golden. Cool completely before serving.
