1 cup Quay’s Buckwheat Flour
1 tbsp maple syrup or coconut sugar
1 tbsp baking powder
¼ tsp salt
1 cup plant-based milk
1 egg or flax egg (1 tbsp ground flax + 3 tbsp water)
1 tsp vanilla extract
1 tbsp oil or melted coconut oil
Directions:
- Mix dry ingredients in a bowl.
- Whisk wet ingredients separately, then combine.
- Cook pancakes on a lightly oiled pan, 2–3 mins per side.
- Serve warm with your favorite toppings.
