Cranberry Muffins

You'll Need:
1 ½ cups gluten free all purpose flour (or oat flour blend)
1 cup rolled oats
2 tsp baking powder
½ tsp baking soda
½ tsp sea salt
3 tbsp Quay Naturals Organic Cranberry Juice Powder
2 large eggs (or flax eggs)
½ cup coconut sugar or organic cane sugar
⅓ cup melted coconut oil or avocado oil
1 cup unsweetened almond milk (or any dairy free milk)
1 tsp vanilla extract
Optional: ¼ cup dried cranberries for extra texture
Directions:
- Preheat oven to 350°F (175°C). Line a muffin tin with parchment liners.
- Whisk flour, oats, baking powder, baking soda, salt, and cranberry powder in a large bowl.
- In another bowl, beat eggs with sugar, oil, milk, and vanilla until smooth.
- Combine wet and dry ingredients gently until just mixed. Fold in dried cranberries if using.
- Fill liners ¾ full.
- Bake 20–22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool for 5 minutes, then transfer to a wire rack.
Tip: Add an extra teaspoon of cranberry powder to the batter for a deeper pink hue and tangier flavor.
