You'll Need:
2 cups Quay's gluten free all purpose flour (or oat flour for extra softness)
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1 to 2 tsp Quay Naturals Spirulina Powder and Chlorella Powder (start with less for milder flavor)
2 large eggs (room temp)
⅓ cup coconut oil or avocado oil, melted
½ cup pure maple syrup
1 cup unsweetened almond milk (or any dairy free milk)
2 tsp vanilla extract
¾ cup dairy free mini chocolate chips (plus extra for topping)
Directions:
- Preheat oven to 350°F (175°C). Line muffin tin with parchment liners.
- Mix dry ingredients: In a large bowl, whisk flour, baking powder, baking soda, salt, and spirulina or chlorella.
- Mix wet ingredients: In another bowl, whisk eggs, oil, maple syrup, almond milk, and vanilla until smooth.
- Combine: Pour wet into dry and mix until just combined. Do not overmix. Fold in chocolate chips.
- Fill and top: Divide batter evenly into liners. Sprinkle with extra chocolate chips.
- Bake 18 to 20 minutes, or until a toothpick comes out clean.
- Cool and enjoy before packing or storing.
