For most cooking and baking, swap 1 cup of cornstarch with 1 cup of potato starch

You'll Need:

1 Cup Quay's Potato starch.
1/4 Cup Quay's Almond flour.
1/2 Cup Quay's White Rice Flour.
1/2 cup sugar.
2 Tablespoon baking powder. .
1/2 Tablespoon baking soda.
1/2 Tablespoon salt.
1/2 Cup melted butter.
2 Large eggs.
1/2 Cup greek yogurt.
1 Zest and juice of large orange.
1 Cup fresh or frozen cranberries.

Directions:

  1. PREHEAT your oven to 350°F (175°C) and prepare a muffin tin with liners or grease it.
  2. WHISK together potato starch, white rice flour, almond flour, sugar, baking powder, baking soda, and salt.
  3. IN BOWL mix melted butter, eggs, Greek yogurt, orange zest, and orange juice.
  4. COMBINE wet and dry ingredients, stirring until just mixed.
  5. SPOON the batter into muffin cups, filling each about two- thirds full.
  6. BAKE for 20-25 minutes until a toothpick comes out clean when inserted into a muffin.
  7. ALLOW the muffins to cool for a few minutes in the tin before transferring them to a wire rack to cool completely.
