Cassava Flour Blueberry Muffins

Ingredients:

  • 2 cups Quay Naturals Cassava Flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 2 eggs
  • 1 cup dairy free milk
  • ½ cup unsalted butter
  • 1 cup sugar
  • 1 tbsp vanilla extract
  • 1 cup fresh blueberries

Instructions:

  1. Heat your oven to 400F/200C. Beat together softened butter with sugar until pale and creamy).
  2. Add the eggs and beat in for 1 minute. Add the vanilla extract and milk, mix together.
  3. In a separate bowl, mix the flour, baking powder, baking soda and pinch of salt. Add this to the other ingredients, plus the blueberries and stir together.
  4. Divide the mixture into muffin cases and bake for 20 minutes until golden.
  5. Finally, remove from oven and serve!
