Ingredients:
- 2 cups Quay Naturals Cassava Flour
 - 1/2 tsp baking soda
 - 1 tsp baking powder
 - 2 eggs
 - 1 cup dairy free milk
 - ½ cup unsalted butter
 - 1 cup sugar
 - 1 tbsp vanilla extract
 - 1 cup fresh blueberries
 
Instructions:
- Heat your oven to 400F/200C. Beat together softened butter with sugar until pale and creamy).
 - Add the eggs and beat in for 1 minute. Add the vanilla extract and milk, mix together.
 - In a separate bowl, mix the flour, baking powder, baking soda and pinch of salt. Add this to the other ingredients, plus the blueberries and stir together.
 - Divide the mixture into muffin cases and bake for 20 minutes until golden.
 - Finally, remove from oven and serve!
