Ingredients:
- 2 cups gluten-free flour blend (I prefer quay naturals All Purpose Flour. You can make your own with a combination of gluten-free flours like fonio flour, rice flour, cassava flour, sorghum flour, tigernut flour, and tapioca flour).
- ¼ cup brown sugar
- 3 tablespoons honey
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ cup cold unsalted butter, cut into small cubes (or dairy-free alternative for a vegan option)
- 2-4 tablespoons cold water
Instructions:
- Combine all the dry ingredients in a large mixing bowl.
- Add the cold butter cubes to the flour mixture. Cut the butter into the flour with your fingers or using a pastry cutter until it look like coarse crumbs.
- Add honey and vanilla extract to the flour mixture and stir.
- Gradually add the cold water, 1 tbsp. at a time, and continue mixing until the dough forms a ball. You may not need to use all the water, so add it gradually until the right consistency is achieved.
- Use parchment paper to line a baking sheet.
- Once the dough is formed, divide it in half. Roll the dough out between parchment papers or on a silicone baking mat to your desired thickness, usually around 1/8 inch thick.
- Remove the top parchment paper and transfer it onto the prepared baking sheet. Use a knife or a pizza cutter to score the dough into graham cracker shapes and prick the dough with a chopstick or fork.
- Bake the graham crackers in the preheated (to 350°F) oven for around 12-15 minutes or until the edges turn golden brown.
- Take them out of the oven and let them cool on the baking tray for a short. Next, transfer them to a wire rack to cool thoroughly.
Recipe Notes:
- Enjoy them plain, dip them in various spreads or sauces, or as a topping or mix-in for various desserts.
- Store the gluten-free graham crackers at room temperature in an airtight container for up to 5-6 days.
